Big food companies tend to use great big machines that knock all the stuffing (and the goodness) out of the ingredients. At our Scoff Central Kitchens we keep our batch sizes small and cook everything by hand, using chefs not machines. When we've finished, each meal is frozen really quickly to lock in all the goodness naturally, until the day you need it.
